Another great egg-free recipe for a plant based diet! Although summer is coming to an end (sad-face)... the garden is still flourishing with fresh herbs and veggies. Those crisp, cooler mornings are good for growing one of our favourite ingredients... SPINACH! This super easy brunch wrap is sooo tasty, it's almost hard to believe it is jam packed with vitamin C, vitamin B12, protein and vitamin K (thank you spinach!).


  • 2 Eggcitables “Eggs”
  • 1 tortilla wrap (we used sun-dried tomato and basil)
  • 1 tbsp of vegan mayonnaise
  • 1 roma tomato, diced
  • ¼ cup red onion, diced
  • 2 tbsp fresh basil, chiffonade
  • ⅔ cup spinach


  • ¼ tsp of olive oil (for pan toasting)


Cook and scramble Eggcitables according to directions on package

Spread vegan mayo in the middle of the tortilla wrap. Add diced tomato, diced red onion and fresh basil. Top with scrambled Eggcitables and spinach.

Wrap the tortilla similar to a burrito… ensuring that all the ingredients are secured inside.

*Optional* Brush the wrap with olive oil and toast in a grilling pan (or in a panini press) over medium-high heat until brown.

Use a sharp knife to cut in half… Enjoy!
