If you can't eat eggs, but love waffles, this plant based alternative to traditional waffles will be perfect for you! That's why we decided to fully embrace the pumpkin spice vibe with these sweet, fluffy waffles. Sunday morning now call for a delicious stack, a (large) cup of hot coffee, and some time to appreciate the autumn weather.


  • 1 Eggcitables egg
  • 2 tbsp of vegan butter, melted
  • ⅔ cup of non-dairy milk
  • ½ tbsp apple cider vinegar
  • ¾ cup of all purpose flour (can sub GF)
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • ⅛ tsp allspice


Preheat waffle maker. Mix up one Eggcitables “egg” and set aside.

Melt vegan butter, add non-dairy milk and apple cider vinegar. Whisk briskly and set aside.

In a large mixing bowl, combine flour, baking soda, salt, brown sugar and spices. Add Eggcitables “egg” to the dry mix and then pour in non-dairy milk/butter mixture.

Use an electric hand mixer to mix for 3-5 mins until air is thoroughly incorporated into the batter. Use a ladle to pour batter into the waffle maker and cook according to instructions (usually 5-6 mins until the steam stops).

Top with fruit, powdered sugar, and maple syrup. Enjoy!
