Makes 12 Muffins

Ahh, the holidays… what a wonderful, but hectic, time of year! These muffins make the perfect grab and go breakfast or an excellent batch of goodies to bring to a holiday party. Fluffy, just the right amount of sweet, and packed with delicious dried cranberries, this muffin recipe will surely spread the holiday cheer.


½ cup of vegan butter or margarine

½ cup of granulated, white sugar

¼ cup of brown sugar

2 Eggcitables Eggs

⅔ cup of vegan buttermilk (we use oat milk + ½ tsp lemon juice)

1 tsp vanilla

1 ¾ cup of flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

¼ tsp cinnamon 

1 orange, zested

1 cup dried cranberries

Optional glaze

1 cup of powdered sugar

3 tbsp of orange juice


Preheat oven to 375o. Spray 12 unit muffin tin with non-stick cooking spray or insert 12 cupcake liners.

In a small bowl, whisk up Eggcitables egg. In another small bowl, whisk vegan milk and lemon juice. Set both aside. In a large mixing bowl, vigorously whisk vegan butter and sugar until creamed. Add Eggcitables Eggs, vegan buttermilk, and vanilla, whisk vigorously again until thoroughly combined.

In another large bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Slowly add the dry ingredients to the wet ingredients (¼ at a time), whisking until thoroughly combined. Fold in the orange zest and cranberries until uniform.

Spoon the batter into the muffin tin. Try to make the muffins relatively even in size. Bake at 375o

for 18 minutes.
