Cranberry Coconut Cookies
1 Eggcitables Egg
½ cup vegan butter, softened
1 cup brown sugar
2 tsp vanilla extract
1 cup all purpose flour
½ cup oat flour
1 tsp baking soda
¼ tsp salt
¼ cup unsweetened, shredded coconut
½ cup dried cranberries
Preheat oven to 350oF and grease cookie sheet pan
Mix Eggcitables & water according to product instructions in a small bowl and set aside.
In a large bowl (or stand mixer) beat together vegan butter, brown sugar, and vanilla extract. Add Eggcitables Egg, beat until well blended.
Combine all purpose flour, oat flour, baking soda, and salt in a large sifter. Sift all dry ingredients into the large mixing bowl with wet ingredients.
Beat the dry ingredients into the wet ingredients until combined. Use a spatula to mix in coconut and dried cranberries.
Roll cookie dough into 1 - 1 ½ inch balls and place on a cookie sheet, well spaced apart. Bake for 10 - 12 minutes. Let cool and Enjoy!
