We teamed up with our New Brunswick friends at Snak to create this ooey-gooey cake like baked oats recipe. This recipe is insanely easy to whip up: just measure, blend, pour & bake. Made with whole grain oats, coconut sugar, Eggcitables plant-based egg and a shot of espresso - this baked oats recipe will absolutely kick start your day.
Ingredients
½ cup of rolled oats
1 small banana
1 tbsp coconut sugar
1 tbsp chia & flax seed
½ cup oat milk (or other non-dairy milk)
1 shot of espresso
Instructions
Preheat oven to 350 C
In a blender combine; rolled oats, banana, coconut sugar, seeds, oat milk, espresso & Eggcitables plant-based egg. Blend until smooth.
Pour 1/2 the mixture in a small baking dish. Add Snak peanut butter cup. Add the remaining mixture. Bake at 350 C for 20-22 minutes. Let cool & Enjoy!
Optional: Swap out coconut sugar for brown sugar for a sweeter-cake like oats. Top with nuts or seeds & drizzle peanut butter.
