German Apple Muffins

We teamed up with our friends at Earthli to create this amazing & delicious German Apple muffin recipe. These muffins taste absolutely identical to the traditional cake recipe but have less sugar & fat and have more protein. These muffins are healthy, delicious and made 100% vegan using Eggcitables plant-based egg. They're a great high protein grab & go breakfast or a tasty snack.


1 cup white sugar

1/4 cup coconut sugar

3/4 cup olive oil

1/3 cup oat milk (or other non-dairy milk)

2 Eggcitables plant-based eggs

1 tsp cinnamon 

1/2 tsp salt

1 1/2 cups of all purpose flour

1/3 cup Earthli Green Apple Plant Protein

1 tbsp baking soda

1 tbsp chia & flax seeds

2 large Macintosh apples, diced

Topping: 3 tbsp of coconut sugar + 1 tbsp vegan butter


Preheat oven to 350 C

Grease muffin tin. In a large mixing bowl, cream sugars & oil. Add plant-based milk, Eggcitables plant-based eggs, cinnamon & salt. Stir until consistent throughout.

In a separate bowl, combine flour, Earthli protein powder, baking soda & seeds. Slowly add the dry ingredients to the wet ingredients in three equal increments. Fold in the diced apples.

Scoop the batter out into muffin tins (appx 1/4 cup per muffin). Sprinkle with sugar & butter topping. Bake at 350 C for 22-24 minutes. Let cool & Enjoy!
