Eating plant-based doesn’t mean you have to miss out on your favorite breakfast meals. This vegan chicken & waffles recipe is so satisfying. Eggcitables plant-based works great as a binding agent for batters. Feel free to top this recipe with your favorite veggies and sauces. We recommend some diced green onion, Sriracha, and local maple syrup!
Ingredients
Tofu chick'un
1/2 pack of firm tofu, pressed
1/2 cup cracker crumbs
1/2 tsp onion powder
1/2 tsp poultry seasoning
1/2 tsp salt
1/2 tsp nutritional yeast
2 Eggcitables eggs
Instructions:
Preheat oven 375°
In a small bowl, combine cracker crumbs, nutritional yeast, and seasoning
Pull apart the tofu into 4 pieces
Dredge the tofu in Eggcitables then cover in crumbs
Repeat
Place on lined baking sheet
Spray liberally with oil
Bake for 20 mins until golden, flipping halfway
Egg Waffles
8 Eggcitables eggs
*Optional Use Garlic and Chive flavor
Instructions
Heat up Waffle iron
Pour 1/2 Eggcitables egg in iron to make 2 waffles
Cook for 4-5 minutes until steam stops
Repeat for other 1/2 Eggcitables
