Cheddar Waffle Latkes

Cheddar Waffle Latkes

I absolutely LOVE latkes - but they are so messy to make. These vegan cheddar & onion waffle latkes are the perfect solution. 100% vegan, gluten free and ready in under 20 minutes. Serve with vegan breakfast sausages or scrambled tofu.

Feel free to switch out the green onion for parsley, cilantro or basil and change the vegan cheese to get different flavor combinations. You can also include shredded carrot or sweet potato. 


6 medium potatoes, shredded & drained

1 green onion, diced

1/2 cup vegan cheddar (we use Daiya)

2 Eggcitables eggs

Salt & pepper to season


Heat up waffle iron

Combine potatoes, green onion, cheddar and salt/pepper in a large bowl

Add Eggcitables eggs and mix thoroughly

Spray waffle iron liberally with oil

Pour 3/4 cup of latkes mixture to each waffle iron

Cook for 12 minutes until crisp
